Vibrissa Beer is a vibriant and rapidly growing company with two modern, spacious and beautiful facilities in historic Front Royal and Old Town Winchester, Virginia. Our nationally award-winning beer is consistently complemented by our exceptional food. As we continue to strive to achieve the highest levels of craft in what we do, we are looking to add a talented and driven Chef to be part of our Winchester team.

Salary = $62-72k per year

Responsibilities

  • Lead all aspects of Vibrissa's culinary team at our Winchester location.
  • Design, develop, and execute fun, creative, and profitable upscale pub fare to include gluten-free, and plant-based options as well as artisanal, sourdough pizza.
  • Manage food, labor and operational costs in a highly disciplined fashion.
  • Manage inventory and food / supply vendors to ensure ready availability of quality food and supplies for the best possible cost.
  • Set and uphold high standards for food and kitchen safety and cleanliness.
  • Hire, train, coach and manage the performance of a sous chef, line cooks, prep cooks and dishwashers, ensuring mutual respect and positive reinforcement to achieve stellar results.
  • Schedule kitchen staff to ensure right levels of staff for predicted volume. Will roll up sleeves and jump on the line to cover unpredicatble spikes, if necessary.
  • Develop and implemens efficient and repeatable work processes and standards to create the most consistent, timely and highest quality product possible.
  • Focus on the work and strongly reinforce a positive and drama-free, fair and equitable workplace.

This positon reports to the President, Vibrissa Beer and fully participates as a member of the Vibrissa Management Team.

Qualifications

  • 3+ years of culinary management experience in a comparable restaurant. Culinary degree highly preferred.
  • Ability to create upscale pub fare that is differentiating and profitable. Plant-based, vegan or vegetarian experience is a defitnite asset. Artisan sour-dough pizza experience is also a major plus.
  • Confidence and a positive, can-do attitude, demonstrating a level of passion and dedication to the craft and the customer experience alike.
  • Ability to lead, managing through continuous process improvement and a systems approach.
  • Ability to positively motivate others and build a diverse and effective team
  • Ability to train, coach and uphold the highest standards.
  • Proactive team player that embodies our spirit of entrepreneurship and mutual respect
  • Strong interpersonal and problem-solving abilities
  • Results-orientaton focus and impeccable organizational skills
  • Works well under pressure in a fast-paced , high-volume envivonrment
  • Extensive knowledge and ability to execute the highest level of food safety, kitchen safety and cleanliness. Serv-Safe Manager Certification Required.
  • Exceptional energy and stamina.
  • High level of financal savy and kitchen operational skills.
  • Ability to source product and manage food vendors and inventory with well disciplined processes.
  • Excellent food preparation techniques, presentation skills and strong attention to detail
  • Full-time flexible hours are required (days, nights, weekends, holidays)
  • ServeSafe Manager Certified

Salary and Benefits :

  • $62,000 -72,000 per year, 10 Days of Paid Vacation, Employee Discounts, Health Insurance Offered at Group rates (not subsidized).
